Lazy breakfast.
1 whole egg, 3 egg whites, spinach, red bell pepper, capers, red onion and avocado with olive oil dressing.

Lunch: Zucchini pasta in pasta sauce with creamy avo.
Wow, just wow. This was so delicious! 
Ingredients for pasta & sauce:
2 zucchini
1 can of organic crushed tomatoes
1/2 onion chopped
1/2 red bell pepper chopped
1/4c apple cider vinegar
1/2t crushed chilli
1t crushed garlic
small bunch of chopped basil 
1/2t ground coriander 
salt and pepper
Directions:
Slice zucchini into thin noodle like slices with a mandolin, peeler or spiralizer.
place in a sieve and sprinkle with salt. leave aside for 20 mins, while the moister is drawn out.
start on the sauce. Place oil, onion, garlic and chilli in a pan and cook until onions are soft. 
Add all other ingredients and simmer until mixture is reduced into a thick sauce. 
while sauce is reducing place you noodles onto a paper towel and dab any extra moister out.
place more oil in a new pan and heat. Add noodles and cook until soft (around 2-4 min)
once noodles are cooked add them into the paster sauce
Enjoy!
Oh and the avocado was just mashed with some lemon, salt and pepper :-)

How do you go about thawing out the rice that you froze??

I just heat it up in the microwave! I was worried about it drying out the first time I did it, but there was still a lot of moisture coming off the bag once it had been re-heated :-) 

Any tips on healthy food that doesn't spoil too quickly? I'm moving in with my boyfriend and going from living with four other people to just me and him, I want to maintain eating healthy but I'm afraid all the stuff I'll buy will go bad if it isn't eaten within 3 or 4 days

Hi there :-)

Ugh yeah I hate that, it’s really nice to have fresh produce but it does tend to spoil pretty quickly :-( You can have fresh produce just make sure you do certain things in order to make it last as long as possible. Firstly make sure you are storing it in the correct place, for instance tomatoes last a lot longer at room temperature than in the fridge. Also I like to keep all of my fresh produce in air tight containers or bags, I feel like that does make a huge difference for me. Especially when I don’t use the whole thing (happens all the time as I only cook for myself), I can just put it in an airtight bag and re-use it another day.

An easy way to maintain healthy eating is by using the AMAZING freezer, it is my lifesaver haha. You can get most veges and fruit in frozen form and they still taste fantastic. I use frozen foods alllll the time. I’d be a lot poorer if I didn’t haha. I also use the freezer for preparing my foods in advance. I.e I buy a tonne of fresh produce and make things like soups, stir-frys, smoothies or even just freeze fruits and eat them from frozen (Yum). All you need to do is zap the pre-made meals in the microwave and you’re good to go. Using your freezer alone you could have yummy healthy food that won’t spoil for months! (You can do this with meats too)

Other than that if you stock your cupboards full of the non-perishable basics such as, whole grains, nuts, dried fruits etc then you’ll only need to worry about buying your fresh produce for the week. Also keep in mind some fruits and veges like potatoes, carrots, oranges etc tend to last longer than others.

Well, there’s my brown rice cooked for about a month…. I love freezers.

CRISPY SWEET POTATO CHIPS!
I swear these are the best! They’re super crispy, super clean and healthy!
All you need is 1 sweet potato, 1t of evoo, salt, pepper, any other flavours of your choice (I used chilli, paprika and garlic), a plastic bag and a microwave! 
Slice your sweet potato (or any kind of potato) into VERY thin slices. I didn’t have a slicer so I just used a potato peeler. Once it is sliced, put the potato, olive oil and flavourings into a plastic bag and shake it around until all slices are covered. Place potatoes in a thin layer (make sure none are overlapping) on a microwaveable dish, preferably one where the air can get all around the chips. Pop the dish in the microwave on high for about 4-5 minutes (times will vary). Once done they will have shrunken and darkened in colour, but they will still feel a little soft. Once chips have cooled down (takes like a minute) they go hard and crispy! 
Yum yum yum.
